175. Orange Brandy Chicken

Ingredients

2 tablespoons (1/4 stick) butter

4 boneless chicken breast halves

1 teaspoon minced fresh rosemary or 1/2 teaspoon dried

1/3 cup frozen orange juice concentrate, thawed

1/3 cup canned chicken broth

2 tablespoons brandy

Orange slices (optional)

Direction

Melt butter on medium high heat in big heavy skillet. Season chicken with rosemary, pepper and salt. Put chicken in skillet; sauté for 3 minutes per side till brown. Add brandy, chicken broth and orange juice concentrate; simmer for 5 minutes till chicken just cooks through. Put chicken onto plate; to keep warm, tent with foil. Boil pan juices for 5 minutes till thickens to sauce consistency, occasionally mixing. Put sauce on chicken; garnish, if desired, with orange slices. Serve.
